Easy Vegetarian Recipe for the Holidays Vegetarian Chili Macaroni

This vegetarian chili will keep you warm and nourished. It is an excellent alternative to meat, being rich in protein too. An added bonus of this chili is its high fiber content. Great example of a yummy, easy and healthy meal. Ingredients 1 medium onion, chopped 2 Tbsp. chili powder 1 Tbsp. canola oil ¼ tsp. salt ¼ tsp black pepper 1 (28-oz.) can crushed tomatoes 1 (15-oz.) can black beans, rinsed and drained 1 lb. macaroni, cooked 1 c. sharp Cheddar cheese, shredded Cilantro, for garnish Directions 1- In a large pot, heat canola oil, salt, pepper, chili powder and onion for approximately 10 minutes, stirring often. 2- Add crushed tomatoes and black beans to the pot. 3- Simmer on high heat
